I am such a fan of soups. Issue is, I live where it is hot all year round as well as being a lazy person in general when it comes to the kitchen. I am not a fan of cooking… and then the clean up afterwards!
So I was checking out others blogs and one posted a share of someones Cream Cheese Potato Soup and I HAD to make it. Thing is, I tweaked it and made it my own. I changed up the recipe as usual. I am not one to keep to a recipe, unless of course it’s cookies!
Back to the story: I got home and decided to make this soup. Reason I changed it up was because I also didn’t have the exact amount of the ingredients needed, so I made do with what I had in the kitchen. Also, I took out the ham part as I keep a Kosher diet, but for anyone who wants, you can add any ham or meat/poultry in it!
Let me just say, it turned out AMAZING! Even my 1 year old loved it that when she took her first bite, she was shimmying in her high chair which means it taste good!
So this Cream Cheese Potato Soup is a mix of Gold/Yellow Potatoes and Sweet Potatoes. Why? I didn’t have enough of the regular potatoes so I used some sweet potatoes I had. I was actually quite nervous it would have a sweet flavor, but to be honest, it didn’t!
So I started chopping while I let the broth get to a boil and then added the cream cheese and stirred until it melted. From there, I just dumped in the rest of the ingredients. To be honest, this is the easiest soup recipe I have ever made as well as so, so FLAVORFUL!
Once everything is in the pot, you just let it sit for about a half hour or until the potatoes are soft. Then you take those handheld blender thing-a-magigers and do some szhooszhing until it’s nice and creamy.
And once that is done, you make yourself a bowl and enjoy its yumminess! To be honest, I think this is the best soup I have made, but that could be because I like any creamy soup!
Not gonna keep you waiting any longer for this easy recipe, so here it is:
Cream Cheese Potato Soup
- 6 Cups of Water
- 6 Teaspoons of dry soup mix (use any flavor you want)
- 2 packages of 8 oz. Cream Cheese
- 2 Cups diced Gold/Yellow Potatoes
- 2 Cups diced Sweet Potatoes
- 1/2 Cup diced onion
- 1 Teaspoon Garlic Powder
- 1 Teaspoon chopped dill weed
- Dice up the potatoes and onions. Chop up dill weed.
- Combine water and soup mix and bring to a boil.
- Add cream cheese to boiled broth and stir until the cream cheese is melted
- Once all the cream cheese is melted, add in all the other ingredients: potatoes, dill and garlic powder and stir.
- Let it simmer uncovered for about a half hour or until everything is soft enough to blend.
- Serve up and ENJOY!
